Bà Thu's family has made cao lầu for three generations: chewy lye-water noodles, char siu-style pork, herbs from the Trà Quế gardens and crackling rice croutons, assembled in the courtyard of their own ancient-town house. Ten tables, one dish plus a couple of sides, done when the noodles run out — usually mid-afternoon. It is the bowl every restaurant in town is quietly measured against.
