Doña Chelo runs a lunch-only fonda two streets off the Coyoacán plaza: soup, a guisado of the day, tortillas from the comal, agua fresca, done. When the mole negro appears — most Fridays — locals text each other. Closes at 5pm sharp and does not open weekends, which is either a flaw or proof of a life well ordered.
